Always on the hunt for something new and fun, I stumbled upon a web page probably a decade ago. It was enticing that this recipe was eggless and had whisky in them. Whoever you are, you had a profound impact on me and to this day, I still update this recipe. Thanks for the influence!
Ingredients:
avoid anything from Islay (region) unless you like smoke / peat
Instructions:
1. Preheat oven to 350 degrees.
2. Mix the following in a small bowl: sugar, oil, scotch, water, add dry ingredients last.
3. Look at that dram.
4. Take a little nip of it and taste the essence of the whisky.
5. Mix the ingredients from #2.
6. Roll the mixture into small balls. I used a small scoop/tablespoon to help shape. They may seem thick, but should bake out
7. Take the balls of dough and roll into the extra sugar. Sprinkle blue / white sprinkles onto the cookies at this time.
8. Just drink the dram already
9. Place the mixture onto a baking sheet. Make sure that the cookies are spread far enough as they will expand in baking.
10.Bake until the bottoms become lightly browned ** Monitor this. I've had batches ready to remove from the oven between 12-15 minutes.
11.The cookies will feel puffy to the touch and soft to eat as warm. I generally will let them sit in a tin or jar for a day. They will be more of a shortbread taste.
12. Drink another shot of whisky in the case the cookies didn't turn out how you wanted. Learn from this batch, make the next one better.
